Zahtar Recipes Herbed Scrambled Eggs 4 eggs whipped ¼ c. milk 1 tsp. Zahtar spice 1 cup shredded cheddar cheese - Fry with margarine in a non-stick pan until the eggs are done. Simple uses: -add to top of bread before baking. -add to olive oil and dip crusty bread. -add to soups for herb flavor. -Coat chicken and grill. -sauté with mixed veggies. Egyptian Bean Soup 1 c. chopped onion 2 T. minced garlic 1 c. chopped carrot 2 cans fava beans, liquid drained ¼ c. olive oil 1 can petite diced tomato 1 bay leaf 3 ½ c. veggie stock 3 T. lemon juice 1 T. Zahtar spice 1 tsp. salt 1 tsp. black pepper Sauté onion and garlic in olive oil until translucent. Add spices and remaining vegetables, cook on medium heat for 5 minutes. Stir in veggie stock, add beans, lemon juice, and simmer 15 minutes. Garnish with fresh chopped parsley. Serve with pita bread. Serves 6. |

Berbere Recipes It has come to my attention that Berbere Hot Pepper Spice is absolutely astounding on Beef Jerky. Logan, thank you very much for bringing me the best jerky I’ve ever had!!! Berbere is intended as a condiment to add to food for spiciness. It is used in African cuisine with stews and soups. The easiest way to experiment with this spice is to rub on meats, or add to store bought soups.

Dill, scallion, garlic, onion, chervil, lemon, and citric acid. For sour cream dip16 oz. sour cream/plain yogurt 1 T. seasoning, 1 tsp. red wine vinegar, salt & pepper to taste. For Cream Cheese Ball 1 T. seasoning to 16 oz. cream cheese. For Dill Spread 1 tsp. seasoning and salt to taste. Great with Fish, chicken, in cream sauces, with tomato, in soups, and in mashed potatoes. Dilled Carrot Soup 1 lb. carrots chopped 2 c. celery chopped 1 onion chopped 1 tsp. Dill spice 1/2 tsp Curry powder 2 T. salt 1 T brown sugar 3 c. vegetable stock - Cook above ingredients on medium heat until the veggies are completely soft. Puree in a food processor. Garnish with a dollop of sour cream.

Marrakesh Recipes This is an excellent grilling rub for anyone who is not familiar with Moroccan cuisine. Use olive oil to coat meats or vegetable before sprinkling on rub.
Massaman Recipes 3 T. Massaman Curry 2 Tbsp. fish sauce 1 tsp. shrimp paste OTHER INGREDIENTS: 1/2 chicken, chopped into pieces 1 onion chopped 2 cups cooked diced potato 1 1/2 cans coconut milk handful of fresh coriander, for garnish 1/4 cup dry shredded baking coconut, unsweetened COCONUT RICE: 1 cup Thai jasmine-scented rice 1 cup coconut milk 1 cup water 1/2 tsp. salt PREPARATION: Stir together curry, fish sauce, shrimp paste, and coconut milk. Place paste in a casserole/baking dish together with the chicken and the rest of the ingredients. Cover and bake in the oven at 325 degrees for 1.5 hours, or until chicken is very tender, and the curry gravy has diminished to a thick sauce. While the curry is cooking, make the rice. Pour water, salt, and coconut milk into a pot placed over high heat. Add the rice. Stir well to mix water and coconut milk, and to keep rice from sticking to the bottom. Allow to come to a boil. When coconut-water reaches the bubbling point, turn down the heat to medium-low (around #2.5) and half-cover the pot by tilting the lid, allowing some of the steam to escape. Allow to cook like this for 20 minutes, or until all the liquid is gone. Now cover the pot completely and turn off the heat, allowing the rice to "steam" cook with its own heat until the curry is ready. Place shredded coconut in a dry frying pan over medium-high heat. Stir constantly, until coconut has toasted to a light golden brown. Remove from heat and pour coconut into a bowl (to keep it from continuing to brown in the pan). When curry is done, do a taste test for saltiness, adding more fish sauce (instead of salt) if necessary. To serve, portion out the chicken pieces with a little of the curry sauce spooned overtop. Add a scoop of coconut rice on the side, then garnish with fresh coriander, chopped peanuts, and a sprinkling of toasted coconut. Garnish with and coriander. Massaman Quiches 1 cup chopped red onion 1 cup chopped cucumber 1/2 cup chopped green onion 1 T. chopped fresh cilantro 1 T. Massaman Curry Combine these ingredients and let stand while preparing the rest. 1-2 flats phyllo pastries (you can find these is HyVee in the frozen breakfast section) 4 eggs whipped 1/2 crumbled goat cheese Massaman Curry Spice to garnish Prepare cookie pan with cooking spray of your choice, I used olive oil spray. Lay out phyllo cups. Spoon onion cucumber mixture into phyllo cups, mixture should be flush with the top of the cups. Spoon whipped eggs into each cup slowly (or they will over flow), eggs should be flush with top of cup also. Sprinkle all quiches with a healthy dose of goat cheese. Lightly dust Quiches with Curry powder. Preheat oven to 300 degree oven and bake 30-40 minutes. Can be served warm or cold.
