Berbere-This spice is used as a condiment in Africa.  The spice originated in Ethiopia but it is good with anything.  The first ingredient is cayenne so it is not for the timid.  Good with lamb, beef, chicken, seafood, and vegetables.

Traditionally added to pureed chickpea or ground dried chickpeas.  Best with olive oil.  Use in hummus, to dip with bread; as a rub on meat, and vegetables.  Contains ground peanuts.

Harissa-heavy chilis and caraway.  Add oil to make paste.  Harissa is a spicy sauce from Tunisia.  It is traditional to accompany couscous, soups, and stews.

My own guarded recipe.  The most unusual of all the Moroccan spice combinations.  Contains dried pomegranate seeds and dried preserved lemon.  Tagine, or Moroccan stew, cooking involves a dish that is slow cooked in an oven until the meat falls off the bone.

Moroccan Orange Blend-The secret to this spice combination is plenty of sesame and cumin.  This is somewhat mild with a flavor all its own.  Add to meat, chicken, lamb, or fish.  All Moroccan spices are great with couscous.
