Everyone asked for it so I made my version.  I used all the essentials but added Mexican oregano, chile arbol, and chile gaujillo.  Use as taco seasoning, with fajitas, with guacamole, and on quesadillas.

Fajita Spice

Foods to use with Faith Spice:

Apples, avocado, beans, beef, breads, broccoli, carrot, celery, cheese, chicken & turkey, chili, corn, cucumbers, eggs, mushrooms, onions, pasta, pork, potato, rice, salmon, tomatoes, and vegetables.

Guacamole

4 ripe avocados, pit removed, pulp scooped out, and smashed into a paste

2 romas minced

1 T. fajita spice

1/4 tsp lemon juice

-Stir together and serve.

Quesadilla

1 extra large flour tortilla shell

1/2 cup refried beans

1 cup cheese (jack, cheddar, or pepper jack)

1 tsp. fajita spice

Warm tortilla in microwave for 10 seconds.  Spread beans evenly over one side of the tortilla.  Spread cheese over the beans.  Sprinkle with fajita spice.  Warm large skillet to medium heat.  Make sure skillet is hot before you add the quesadilla.  The quesadilla can be cooked dry (until the cheese melts), or with lard/cooking spray. 

Refried Black Beans

1 can black beans drained and rinsed

1/4 cup onions minced

1/8 cup lard or bacon grease

1 tsp. fajita spice

-In large skillet melt grease or lard, add onions, and sauté until translucent.  Add beans and warm.  Use potato smasher to pulverize beans.  Sauté on low for 5 minutes.

Picadilla

1 lb. ground beef, turkey, or pork

1/2 cup onion chopped

1/2 cup minced apple

1/2 cup minced tomatoes

1/4 cup green pepper

1 T. fresh hot chile (jalapeño, serrano, etc.)

1 T. fajita spice

1 tsp. lard

-In large skillet melt grease or lard, add beef, peppers, & onions, sauté until onions are translucent.  Add tomatoes, apple, and spice.  Add 2 T. water and cover.  Cook for 10 minutes on low.  Good with tacos or as dip.

Pico de gallo

2 tomatoes diced small

1/4 cup onion chopped

1 tsp minced garlic

1 tsp. lime juice

1 T. jalapeño minced

1 tsp. fajita spice

1/2 tsp. salt

-Stir together and let sit 20 minutes before serving.

-fun things to add to Pico de gallo(1/2 cup of chosen fruit):

Pineapple, mango, papaya, apricots, raspberries, blackberries, oranges, strawberries, all fruit is good with salsa.

Fajita Spice
This is a wonderful additional to anything Mexican. Please email me if you need a fajita recipe.  It basically uses meat, peppers, onions, and tomatoes with 1 T. Fajita spice.
Fajitas are a Tex-Mex invention and not is not Mexican at all.
Fajitas are often cooked with onions and bell peppers. Popular condiments are sour cream, guacamole, salsa, pico de gallo, cheese, and tomato. In restaurants, the fajita meat is traditionally brought to the table sizzling loudly on a metal platter or skillet, with the tortillas and condiments served on the side.
