Florentine Herb Blend-Used as a condiment to sprinkle on food.  Red chili and green herbs are found everywhere in Florence. 

Zahtar  is a traditional Mediterranean herb blend.  My recipe consists of marjoram, oregano, thyme, sesame, and sumac.  This seasoning is eaten with pita, then olive oil, and then Zahtar.  It is very good with eggs, cottage cheese, yogurt, with meats and vegetables, or in soups.

Zahtar

Zahtar (za’atar) is a popular Middle eastern spice blend made with toasted sesame seeds, marjoram, thyme, and sumac.  It is mixed with olive oil and salt and drizzled over hot bread, or eaten with bread.  It is also sprinkled over meat and vegetables.  I love Zahtar with scrambled eggs.  Use this blend when baking bread, sprinkled on before baking, or stir into dough.

 

Foods to eat with Zahtar:

Artichokes, beans, breads, broccoli, carrots, cheese, chicken, corn, couscous, cucumbers, eggplant, eggs, fish, greens, lamb, onion, peas, pork, potatoes, rice, salads, salmon, seafood, soups, squash, tomatoes, and vegetables.

Florentine Herb Seasoning

Florentine cooking is linked to a tradition of simple dishes prepared with genuine, tasty but plain ingredients .  Cereals, bread, vegetable and oil (which must be extra-virgin) are the basis of many recipes.

The area surrounding Florence is famous for being the birthplace of Chianti, the most famous Tuscan wine. Four different types of Chianti are produced from the vines on the flourishing Florentine hills.

Many of Florentine dishes are made with ingredients fresh from markets (or buy directly from farmers) and then focus on straightforward preparation.

 

Food to eat with Florentine Herb Seasoning:

Artichokes, avocado, beans of all sorts, beef, savory breads, eggs, fish, greens, lamb, meatloaf, mushrooms, onions, pasta, peas, pork, potatoes, rabbit, rice, salads, salmon, seafood, soups, spinach, summer squash, stuffing, TOMATOES, tuna,  chicken or turkey, and all veggies.

Florentine marinades:

· 1 T. Florentine Herb Seasoning, 1 cup dry red wine, 1/2 cup olive oil, 1 tsp. worcestershire sauce, 1 tsp. salt, 1 tsp. cracked pepper.

· 1 T. Florentine Herb Seasoning, 1 cup vegetable (or soy based) oil, 1 T. roasted garlic, 1 T. lemon juice, 2 T. white wine, 1 tsp sea salt.

Florentine Dressing

1 T. Florentine Herb Seasoning, 2 pureed tomatoes, 1/4 cup red wine vinegar, 1 tsp garlic salt, fresh cracked black pepper to taste, 1/4 cup water, add salt to taste.
