Massaman curry is a Thai dish that can be made with beef, chicken, or pork. It is a Muslim-influenced curry, and the name massaman means "Muslim". True Massaman uses fish sauce or shrimp paste, add coconut milk, roasted peanuts, potato, and chopped onion.  The dish is served with rice and sometimes pickled ginger.

Foods to eat with Massaman:

Coconut, cabbage, celery, cheese, cucumbers, eggs, fish, mushroom, onion, pasta, peanuts, peas, pork, potatoes, rice, salmon, seafood, soups or stews, spinach, tuna, and turnips.

 

Quick marinade:

1 cup rice wine, 1/2 cup sesame oil, 2 T. Massaman Curry, 1 T. lime juice, 1 tsp. peanut butter, 1 tsp. soy sauce; marinate for 3 hours, use marinade as cooking liquid..

Massaman Curry Blend

This is one of the most amazing spice combinations I have encountered.  The true secret to this spice is shallots, which gives it the lighter color.  Although it is the milder of the two Thai curries is still is full flavored and is not for the timid.  True Massaman uses fish sauce or shrimp paste, add coconut milk, roasted peanuts, potato, and chopped onion.  Another delightful addition would be snow peas and celery. The dish is served with rice and sometimes pickled ginger.  I like to add the Massaman to rice as a side dish to sautéed vegetables or grilled food.
