Mediterranean Spice Rub-This blend uses traditional spices used in the Mediterranean.  This blend is specifically made for rubbing on seafood, meats, or vegetables.

Foods to eat with Mediterranean Spice Rub

Artichokes, asparagus, beans of all sorts even green beans, all manners of beef, breads, carrots, cauliflower, cheeses, chicken, cucumbers, dressings for salads, eggplant, eggs, fish, lamb, meatloaf or burger, mushrooms, onions, PASTA,  pork, potatoes, rice, salmon, seafood, soups, spinach, summer squash, tomatoes, and vegetables of all sorts. 

Easy marinades and uses

· 1 cup olive oil, 1/4 cup balsamic vinegar, 1 T. brown sugar, 1 tsp. salt, pinch black pepper, 1 tsp Mediterranean spice rub.  Use as dressing or marinade.

· Dice up 1 loaf of bread, melt 2 cups margarine, and stir into bread with 2 T. Mediterranean spice rub.  Bake in 300 degree oven for 20-25 minutes.  Tasty croutons for salads, soups, or by themselves.

· Sprinkle rub on pizza, in soups, stews, in tomato sauce, in alfredo sauce, or mix into cheeses for dips.

 

Mediterranean Recipes

Spinach pie filling

1 bag frozen spinach

1 onion minced

2 T. minced garlic

2 T. olive oil

½ c. white wine

1 T. Mediterranean Spice Rub

1 egg

2 T. parmesan cheese

¼ cup crumbled feta

- Sauté spinach, onion, garlic, olive oil, white wine, and spices for 10-15 minutes.  Take off heat and let cool.  Stir in remaining ingredients. 

Uses for filling

- Fill into mini phyllo shells, and bake in 350 degree oven for 20 minutes.

-Add more feta and parmesan and fill pie crust, top with another pie crust, crimp edges.  Bake in 350 degree oven for 35 minutes.  Coat crust with butter after baking for an extra savory meal.

Mediterranean meats

Coat chosen meat in olive oil and spice rub.  Allow to marinate 1 hour.  Grill or bake.

Mediterranean Salad

1 jar kalamata olives

½ cup crumbled feta cheese

4 roma tomatoes, quartered

1 red onion chopped

1 green pepper chopped

1 head romaine chopped

¾ cup olive oil

¼ cup balsamic vinegar

1 T. Sea salt

1 tsp. red pepper flakes

1 tsp. sugar

1 T. minced garlic

1 T. Mediterranean Spice Rub

- Mix olive oil through garlic and marinate 2 hours.  Mix all salad ingredients, toss with dressing.  Garnish with spice rub, and serve.

Serves 6.

Mediterranean Spice Rub

When Americans think of the Mediterranean they think of garlic, onion, basil, and oregano.  Street food is grilled in open markets and eaten on the street.  My blend was made especially for grilled meats, but it would be delicious sprinkled over Mediterranean type vegetables.

Meat rubs are exactly what they sound like.  Rub whatever you are seasoning with the blend and cook.  Ideally rubs are used to grill or bake.

Other ingredients can be added to this rub; olive oil, balsamic vinegar, red wine vinegar, white wine, or red wine.  I love to serve grilled chicken with this rub with salads, with pasta, in lasagna, with rice, or in soups.

My favorite recipe with this rub is simple and amazing.  Boil enough noodles for yourself and strain.  In sauté pan at 2 T. margarine/butter and melt with 1 tsp. rub.  When butter starts to boil add 1 T white wine and sauté for 2 minutes.  Take off heat and toss with noodles, toss in  1/4 cup parmesan cheese and devour!!!  Parmesan can be substituted with fontina, pecorino, or Romano cheeses.
