Gaujillo chile, ancho chile, mulato chile, garlic, onion, sesame seed, cocoa powder, salt, cumin, coriander, sucanat sugar, pepper, anise, and cloves.  Most commonly used with the addition of chopped tomato and lard.  Serve with chicken, turkey, pork, or beef.

Mole Spice

Foods good with Mole Spice:

Avocado, beans, beef, carrots, celery, cheese, chicken, chili, chocolate, corn, fish, fruit, greens, onions, peas, pork, potato, sweet potato, pumpkin, rice, seafood, soups & stews, spinach, squash, stuffing, tomatoes, and vegetables.

Mole Sauce

Mix 2 T. Mole spice with 4 T. water and set aside for 1 hour.  After rehydrating add tomato sauce or crushed tomatoes for tomato mole sauce. 

Olive Mole

1 lb. Chicken breast

4 T. olive oil

1 cup pureed black olives

1 small can tomato paste

1 bell pepper, 1 medium onion, 1 potato; all coarsely chopped

1 cup frozen corn

Add 2 T. olive oil, 1 cup puree black olives, and 1 small can tomato paste to use as a hearty chicken mole rub!  Surround the chicken with roughly chopped bell peppers onions, potato, and corn.  Bake chicken in oven at a low temperature (300°) for one hour. Serve with rice or flour tortillas.  Makes my mouth water just thinking about it!

Mole

Latin American specialty meaning concoction, is a rich dark sauce with over 50 different varieties depending on the region.  Generally mole is a smooth dark blend of chile, spices, onion, garlic and a small amount of Mexican chocolate.  Add pepitas (pumpkin seeds) and real Mexican chocolate for truly authentic flavor.  I added a bit of cocoa which is very different than the original.
