Fresh hand ground spices blended from my own recipe.   Both are spicy curries: from the west coast Muchi Curry Bombay Blend, and from the south east coast Madras Curry

Foods to eat with Muchi and Madras Curry

Beans, chutney, eggs, fish, griddle breads, meats, paneer, peas, pitas, potatoes, rice, roasts, seafood, stews, tomatoes, and all vegetables!!!

Meat Rubs

Add 1 T. Garam Masala to every 1/2 cup canola oil, then completely coat meat.  Good on chicken, lamb, salmon, shrimp, and white fish.

 

Foods to eat with Madras Curry:

Apples, breads, brussels sprouts, cabbage, carrots, cauliflower, celery, cheese, chicken or turkey, chili, corn, cucumbers, eggs, fish, lamb, onions, pears, peas, potatoes, sweet potatoes,  pumpkin, rice, salmon, seafood, soups and stews, spinach, squash, tomatoes, tuna, turnips, and vegetables of all sorts.

Easy marinades and uses:

1 cup pineapple juice, 1/2 cooking oil, 2 T. shaved coconut, 1 T. Madras, and 1 tsp. soy sauce.  Use with poultry or seafood.

 

2 T. Madras, 4 T. cooking oil, 1 pureed tomato, 1/2 cup roasted pepper-minced, combine, and cover; tofu, chicken, fish, or lamb.  Best if broiled into the meat or vegetables.

Muchi Curry Bombay Blend

A spicy fish curry from the west coast of India.  Today Bombay is known as Mumbai.  The hot curry, or Muchi curry, powder contains three peppers: cayenne, black, and white pepper. The peppers, combined with the 10 other hand ground spices blended from my own recipe.  Muchi curry is considered a fish curry and compliments it very well but should not be limited to fish.  This is a hot curry.

Madras Curry

A great Curry powder from the aromatic regions of South India. Can be used for authentic dishes as well as to add interest to soups, sauces and stews. Also try in scrambled eggs, vegetables, chicken, and lamb.  Use it in braises, sauces, marinades and to create an intense flavored oil.
