French Parsley Pistou

French Parsley Pistou-French style pesto is a true original.  Add to olive oil and drizzle over soups, dip with bread, add to sauces, or use as rub.  Excellent as rub for seafood, chicken, pork, and vegetables.

Foods to eat with Pistou:

Artichokes, asparagus, beans, breads, broccoli, brussels sprouts, carrots, celery, cheese, chicken, corn, cucumbers, eggs, fish, lamb, meatloaf, mushrooms, olives, onions, pasta, peas, pork, potatoes, rice, salads, salmon, seafood, soups, spinach, summer squash, stuffing, tomatoes, tuna, and vegetables.

Easy additions:

Add to olive oil; drizzle over soups, coat noodles, add to rice, coat chicken, mix into meatloaf, or rub on meat.

Cod with pistou

3 cods filets frozen

1/2 cup olive oil

1 tsp lemon juice

2 T. French Parsley Pistou

-In a large Ziploc place above ingredients.  Refrigerate overnight and then bake in 350 degree oven for 20 minutes.  Serve topped with parmesan on noodles or rice, with a side of vegetables.

French Parsley Pistou

Pistou is a French style pesto.  Pistou sauce, or just pistou, is a cold sauce made from cloves of garlic, fresh basil, and olive oil. Some versions also include grated parmesan. The ingredients are crushed and mixed together in a mortar with a pestle, (pistou means pounded in the Provençal language).  Some recipes drizzle the pistou on the soup just before serving.

The easiest way to experiment with pistou is to use the same as pesto or to add to soups.

I like to eat pistou with green olive in their own vinegar.  Just let the olives marinate over night.
