Tandoori Spice & Soleil’s Squash Soup Spice

Fresh hand ground spices blended from my own recipe: Tandoori Spice, Soleil’s Squash Soup Spice, and Ras el hanout (not pictured).

Foods to eat with Tandoori Spice

Apples, apricot, beans, beef, breads (savory), cauliflower, cheeses, chicken, cucumber, eggplant,  fish, fruit, garlic lamb, mango, meatloaf or vegan meatloaf, mushrooms, onions, parsnips, pasta, pears, peas, pork, potatoes, rabbit, RICE, salads, salmon, seafood, soups & stews, spinach, stuffing (bread stuffing), tomatoes, tuna, turkey, turnips, and vegetables of all sorts.

Tandoori recipes

Mango Chicken Salad

3 c. cooked cubed chicken

1/2 c. red bell pepper

1 diced onion

4 ribs celery diced

1 c. diced dried mango

1 cup light mayo

2 T. dijon mustard

2 tsp. Tandoori Spice

Stir together and refrigerate 1 hour before serving

Tandoori Chicken

Rub 1 tsp. Tandoori spice per large chicken breast with 1 tsp. oil before baking.

 

 

How to use Soleil’s Squash Soup Spice:

For squash soup: in large saucepan combine 2 lb. butternut squash (peeled, deseeded, and cubed), 4 cups water, 2 cans coconut milk (large), 1 large yellow onion (roughly chopped), 2 stalks celery (roughly chopped), 2 T. spice, and salt to taste.  Bring to a boil, reduce heat to simmer, and cook 45-50 minutes (until squash is soft).  Puree until smooth.

Tandoori Spice

Tandoori ovens are used throughout India, they are made of brick and clay, with a rounded-top, cooks meat at high temperatures.  Tandoori paste is usually a red, wet paste made from the Indian spices.  Traditionally Tandoori spices are mixed with oils and are rubbed into the skin of meat and heated in the Tandoori  oven over  very high temperatures. 

My Tandoori spice is a mixture of paprika, cumin, coriander, turmeric, garlic, cayenne, amchur, cinnamon, nutmeg, cardamom, cloves, & ajwain.  Rub Tandoori on to meat and cook over an intense smoky fire.

 

Soleil’s Squash Soup Spice

The best way to explain Soleil’s spice is it resembles an African curry, with paprika, coriander, fennel, and ginger. 

 

Ras el Hanout

A toasted African curry mixture containing many seeds, rose petals, saffron, ginger, thyme, and cinnamon.  Until now I always bought Ras el Hanout in tiny tins for high prices, and wondered what made the contents so precious.  The mystery of foreign foods will never cease to amaze me.
