Massaman curry is a Thai dish that can be made with beef, chicken, or pork. It is a Muslim-influenced curry, and the name massaman means "Muslim". True Massaman uses fish sauce or shrimp paste, add coconut milk, roasted peanuts, potato, and chopped onion.  The dish is served with rice and sometimes pickled ginger.

Thai Red & Green Curry

Food to eat with Thai Curry:

Non-Thai: apples, beef, breads, cabbage, carrots, cauliflower, celery, cheese, chicken, chili, corn, cucumber, eggs, fish, fruit, greens, lamb, meatloaf (lamb, beef, pork, or turkey), mushrooms, onions, pasta, peaches, pears, peas, pork, potatoes, sweet potatoes, pumpkin, rice, salmon, seafood, soup and stew, spinach, squash, tomatoes, and mixed vegetables.

Traditional Thai:  fermented anchovy, shrimp sauce, or fish paste; coconut (milk), holy basil, garlic, lemon grass (the lower stalk only), lime juice, and tamarind; rice and noodles; pork, beef, organ meats, chicken, duck, and quail; seafood; bananas (over 100 different kinds), lychees, mango, pineapple, papaya, star fruit,  mangosteen, coconut, and jackfruit.

Thai spiced veggies

1 bag frozen vegetable medley

1 T. Thai Curry Spice

1 T. rice Vinegar

1 T. rice wine

1 T. sesame oil

- Combine all ingredients in sauté pan.  Cook on medium heat for 10 minutes, stirring often.  Serves 4.

Thai shrimp with pineapple

1 lb. cooked shrimp

1 15 oz. can light chunk pineapple

   Reserve liquid

½ chopped white onion

½ cup green onions

1 T. Thai curry spice

2 T. light soy sauce

1 T. vegetable oil

1 T. rice wine

-Add pineapple juice, Thai spice, soy sauce, vegetable oil, and rice wine to a sauté pan.  Cook on medium heat for 5 minutes, add remaining ingredients.  Cook until the onion begins to soften, and then serve.  Serve with rice. Serves 4.

Thai Rice Curry

1 large sweet potato peeled and cubed

1 15 oz can cubed pineapple, liquid drained

1 onion chopped

1 red bell pepper chopped

2/3 cup chopped celery

2 T. Thai curry spice

2 T. Rice wine

1 T. sesame oil

Minute rice- enough for 6

Sauté all but rice on medium heat for 5 minutes.  Add ½ cup water, sauté for 10 more minutes, stirring often.  Prepare water for minute rice, bring to a boil.  Add veggies, cook 10 minutes.  Add minute rice, stir, turn off heat, and then cover.  Allow to sit for 5 minute before removing lid.  Serve with chopped green onions as garnish.  Serves 6.

Curry Pad Thai

8 oz. rice noodles or ramen                          

1 whole chicken breast chopped     

8 medium shrimp shelled                     

1/2 lb. bean sprouts

1 cup onions chopped

1/2 cup water                                           

3 garlic cloves finely chopped

1/4 cup fish sauce                             

1 egg

3 tablespoons sugar                                 

1tsp. Thai Curry

1/4 cup roasted peanuts finely chopped

1 T. lime juice

1 T. rice wine

1 tsp. soy sauce

1 T. vegetable oil

topping:

1/4 cup shredded bok choy

1/4 cup roasted peanuts finely chopped

optional: peanut sauce

                    

-Place rice noodles in a large bowl.  Cover with warm water; soak

30-45 min.  Cut chicken into 1" strips.

-Cut shrimp in half lengthwise; set aside.  Combine water, fish sauce, Thai Curry spice, sugar, lime juice; set aside.  Reserve 1/4 of bean sprouts for topping; combine remaining sprouts and onions.

-Drain noodles.  Heat a wok over medium heat for 2 min.  Push chicken to one side.  Add 1 T. vegetable oil.  Break egg into wok.  Stir quickly to break up yolk and scramble egg.  When egg is set, mix with chicken.  Add drained noodles, shrimp, rice wine, soy sauce, fish sauce mixture, and 1/4 cup peanuts.  Cook and stir over high heat for 2-3 minutes.  Top with bok choy, peanuts, and optional peanut sauce.

Thai Red & Green Curry

The only difference between Red Thai Curry and Green is the color of the chilis used.  Red Thai Curry uses red chilis which can be very hot.  Green Thai Curry is made with jalapeños and is medium to hot.

This is the easiest way to make Thai Curry Rice!

1 bag sticky sushi rice

1/2 can coconut milk

1 heaping T. Thai Curry 

1 green bell pepper

1 red onion

1 tomato

1 bag frozen peas

1 cup cooked shrimp or chicken, or both!

-Place everything in a casserole dish and heat in oven for 35 minutes, or in the microwave for 8 minutes.  Garnish with fresh chopped cilantro.

Thai Curry Peanut Sauce

1 1/2 cup peanut butter whipped with 1/2 cup hot water, 2 T. soy sauce, and 2 T. Thai Curry Spice

Dice up 1/2 cup each: cucumber, red bell pepper, onion

1 T. minced fresh cilantro

Stir together and let flavors mingle 5 hours or over night.
