Galat dagga is an all-purpose spice mix used in Lebanon, Syria, Jordan, and Palestine and found in many prepared savory dishes.  Mine is a mixture of black peppercorns, cinnamon, nutmeg, grains of paradise, and cloves.

Foods to eat with Tunisian Five Spice:

Beans, beef, carrots, celery, chicken, couscous, cucumbers, eggplant, greens, ham, lamb, onions, peas, (bell) peppers, pork, potatoes, sweet potatoes, pumpkin, rice, salmon, seafood, tomatoes, and vegetables.

Tunisian Lamb Stew

4 lb. leg of lamb, cut in chunks

1 onion chopped

3 tomatoes quartered

1 T. garlic minced

2 potatoes cubed

1/2 c. olive oil

2 c. vegetable stock

2 habanero smashed but otherwise left whole

2 tsp. Tunisian Five Spice

-Stir together all ingredients and place in large casserole dish.  Bake in 350 degree oven for 2 hours.  Serve with couscous.

Tunisian Five Spice

This Tunisian “five spice mixture” combines the aromatic tones of pepper and grains of paradise with the rich scent of cinnamon, nutmeg, and cloves. Moderately hot, very well suited for Arabic stews.

Unlike other North African cuisine, Tunisian food is spicy hot. There is an old wife's tale saying a husband can judge his wife's love by the amount of hot peppers used when preparing his food.

 

In Algeria, Tunisia and Morocco, couscous is generally served with vegetables (carrots, turnips, etc.) cooked in a spicy or mild broth, and some meat (generally, chicken, lamb or mutton); in Morocco, couscous can also be topped with fish in a sweet sauce with raisins and caramelized onions; in some parts of Libya fish and squid are also used. The stew in Tunisia is red with a tomato and chili base, whereas in Morocco it is generally yellow.

For couscous, rice, or stew add 1/2 tsp. of my spice blend.
